Eggplant baked with cheese and tomatos


This September we had a National Cuisine week and recipes exchange in our Etsy Russian Artists Team. One of our team member Svetlana from NESWeddingGarden has shared on her blog a fantastic recipe that I want to share with you. So… eggplant baked with cheese and tomato. To cook it you will need:
1. 1 large eggplant
2. ½ or 1 head of garlic
3. 3 tbsp mayonnaise
4. 300 gr. grated cheese
5. herbs (I use parsley but any others will be also great)
6. 1 tbsp vegetable oil
7. salt

First slice the eggplant, season with salt and leave for 20-30 minutes. After that place the eggplant pieces on a baking pan in one layer, brush the eggplants with vegetable oil and cover the pan with baking paper or folium. Bake them on 250°C for about 30 minutes until they become golden brown.

Mix the mayonnaise with crushed garlic and spread a thin layer of the mix on top of each slice. Slice a tomato and place 1 piece of it on the top of every eggplant. Fold 1 pieces of eggplant on each other in a column making a “sandwich”. Add some shredded cheese and chopped herbs on top.

Returned it to the oven for additional 5-10 minutes.

Winter Baby Blues


Are you ready for winter? If not, then it’s the right time to start preparations in order not to let the winter weather catch you unprepared. As much as the wet and windy weather can be depressing, there’s something extremely satisfying about wrapping up in a gorgeous new shawl or capelet. Thinking of swirling snowflakes and huge snowdrifts directly in front of the house, I have created this cable capelet. To knit the piece I have used my favorite yarn - a soft and warm blend of wool, alpaca and acrylic. And of course winter baby blue as a color…

Fried Chanterelles with Potatoes and Onions

When the leaves are slowly turning red and orange and the air is becoming clean and crisp the perfect season for picking wild mushrooms in Estonia begins. Whole families are going into the woodlands with their baskets and bucketful to pick wild mushrooms which could then be fried, used for a soup or even dried and marinated for later consumption.  …So does my family…
Chanterelles are of my favorite wild mushrooms. They are not only beautiful and easy to cook, but also very healthy to eat. Chanterelles contain fiber and are a good source of vitamins B and D, as well as minerals, including selenium and copper. They can also help to stimulate your immune system.

My favorite dish is Fried Chanterelles with Potatoes and Onions



To cook it you will need:
1.    Chanterelles – 500 gr
2.    4-5 medium to large potatoes
3.    1 large yellow onion
4.    Olive oil
5.    Dill
6.    Salt

First of all wash the chanterelles. Heat a pan until very hot, add the olive oil and heat until shimmering. Add the chanterelles, season with salt and close it with the cover. Simmer it for 15 minutes.

Peel potatoes and onion, cut them for small pieces and add them to the chanterelles.

Fry on small fire for 15 minutes.
Add chopped dill to the chanterelles,  stir together, turn off the fire and let it sit under the cover for a couple of minutes before serving.

Space by Beautyspot


I do not know how many times I have already reviewed this lookbook, but still, I click on it and start watching again ... That's about  a beautiful lookbook that Polina from Beautyspot has released recently.  Everything inside is magical, touching, harmonious and gentle ...collection of jewellery, photos, model, mood ... yarn balls, leg warmers, books ... Fairytale ... Space ... I’m speechless...
Не знаю сколько раз я уже пересмотрела эту красоту, а всё равно, рука так и тянется, чтоб кликнуть мышкой и начать смотреть заново… Это я о прекрасном журнале Полины Beautyspot, который вышел на днях. В нём всё волшебно, трогательно, гармонично и нежно … украшения, фотографии, модель, настроение…  клубки ниток, чулки, книжки… Сказка… Космос… у меня нет слов…

Winter ornaments from D&G


 I’m not that much keen on any fashion brands or designers… but there is still one collection of D&G that I’m just totally in love with. This is fall / winter 2010-2011 and inspite you have probably seen that 100 times before, I still want to post it here as I just cann’t stop staring at it. All this winter ornaments – reindeers and snowflakes… They are so much from my childhood when  grandma used to knit sweaters, mittens and socks for me from handspun yarn...
Вообще-то я совсем не помешана на модных брендах и дизайнерах ... но есть одна коллекция D&G, в которую я просто влюблена. Это - осень / зима 2010-2011. И, несмотря не то, что вы, скорее всего, видели её уже 100 раз, я все еще хочу разместить её здесь, так как просто не могу перестать любоваться. Все эти зимние орнаменты… все эти  олени и снежинки…  так хорошо знакомые с детства, когда бабуля вязала мне свитера, варежки и носочки из самодельной пряжи...

Smells like fall


While fall is arriving, it’s getting darker earlier, the days start getting shorter and nights are getting colder, the leaves are slowly turning red and orange and the air is becoming clean and crisp. I can feel the smell of fall - it smells like ripe apples and fallen leaves. Want to surround myself with warmth and comfort. Want to wear clothes in warm tones, bake cinnamon cakes and light candles every evening...

… and what does fall mean to you? What are the smells, sounds and tastes of fall for you?


С приходом осени  темнеть начинает всё раньше, дни становятся короче, а ночи – холоднее,  деревья с каждым днём всё желтее, а воздух прозрачнее.  Пахнет осенью – пахнет созревшими яблоками и опавшими листьями. Хочется окружить себя теплом и уютом. Хочется носить одежду тёплых тонов, печь пироги с корицей и каждый вечер зажигать свечи.

…а что значит осень для тебя? Какие у неё запахи, звуки и какая она на вкус?

My very first blog post

Hi!

I’m Tanya and this is the first post in my blogging journey.  Hope both my readers and I will enjoy this journey.
I love wild flowers, summer nights, walking by the sea, tasty food... I love mountains and hiking up and down is my passion. My other passion is knitting and warm, cozy, handknitted creations. Well... you just cannot live in Estonia without having a warm handknitted sweater :) . Here on my blog I will share with you the things I love, admire and create.

Меня зовут Таня и это первый пост в моём блого-путешествии, которое, надеюсь, будет интересным как читателям так и мне.
Я люблю полевые цветы, летние ночи, гулять вдоль моря, вкусную еду... Я люблю горы, и горные походы - моя страсть. Другая моя страсть - вязание и тёплые, уютные, вязаные изделия. Ну и в любом случае... в Эстонии просто не выжить без теплого вязаного свитера :) .
