Fried Chanterelles with Potatoes and Onions

When the leaves are slowly turning red and orange and the air is becoming clean and crisp the perfect season for picking wild mushrooms in Estonia begins. Whole families are going into the woodlands with their baskets and bucketful to pick wild mushrooms which could then be fried, used for a soup or even dried and marinated for later consumption.  …So does my family…
Chanterelles are of my favorite wild mushrooms. They are not only beautiful and easy to cook, but also very healthy to eat. Chanterelles contain fiber and are a good source of vitamins B and D, as well as minerals, including selenium and copper. They can also help to stimulate your immune system.

My favorite dish is Fried Chanterelles with Potatoes and Onions



To cook it you will need:
1.    Chanterelles – 500 gr
2.    4-5 medium to large potatoes
3.    1 large yellow onion
4.    Olive oil
5.    Dill
6.    Salt

First of all wash the chanterelles. Heat a pan until very hot, add the olive oil and heat until shimmering. Add the chanterelles, season with salt and close it with the cover. Simmer it for 15 minutes.

Peel potatoes and onion, cut them for small pieces and add them to the chanterelles.

Fry on small fire for 15 minutes.
Add chopped dill to the chanterelles,  stir together, turn off the fire and let it sit under the cover for a couple of minutes before serving.
